Mini Caprese Sammiches

Tomato, to-mah-to. Doesn’t matter, it’s going to be part of a little snackie anyhow.

Easy-peasy snackies (slice! stack! done!) are my favorite. These little tomato, basil, and mozz sammiches are awesome as an appetizer – or if you’re like me and can’t stop eating them, they’re a decent dinner, too!

This cheese is so delicious, I’d eat it even without the tomato and basil.

The Recipe:
Mini Caprese Sammiches
crackers (Triscuits work really well, as do mini-toast squares – I used Bretons because that’s what I had)
2 medium-large on-the-vine tomatoes
1 large ball of fresh mozzarella cheese
fresh basil (or dried in a pinch, but fresh is so much better)
olive oil
fresh ground pepper

Do This
Slice up the tomatoes and the cheese into pieces approximately the same diameter as the crackers, and 1/4″ – 1/2″ thick. If you have the little ping pong ball style of mozz, just flatten the pieces out. If it’s a big ball or a log, slice it up. The ball of cheese I found was so big that I needed to cut each slice in half, but yours may be different.

Stack the sammiches in this order: cracker — tomato — cheese — drizzle of olive oil — basil leaf or dry basil — pepper. Refrigerate if not serving immediately.

This is pretty much the best possible use of the basil plant I just bought. I wonder if it’ll stay alive if I’m constantly picking all of the leaves off?

So simple, but so tasty.

    Yum! This is one of my favorites too! Great on a slice of toasted french bread also. A smear of pesto or a slice of procuitto never hurt either.
